Peanut Butter Corn Flake Clusters Recipe

My husband and I are both peanut butter fanatics. We are obsessed. If we ever have a choice of flavors, and peanut butter is among them, it’s a no-brainer for us.
So, why not take a favorite classic recipe and add a little peanut-y deliciousness to it?
This fun take on the classic corn flake clusters uses only three ingredients. It’s a fun, kid-friendly dessert, based on a favorite cereal. Add the right proportions of chocolate and peanut butter, pop it in the microwave for just the right amount of time, freeze, and you have a new go-to for snacking or serving.

The peanut butter corn flake clusters do hold together, however, as it is mostly chocolate, I recommend keeping it frozen up until serve time. Freeze it initially on a baking sheet (I like to use these reusable baking sheets to save money on recipes like these that don’t include too much grease.) Once it’s frozen, you can transfer it to a container.
If you don’t have (or prefer not to use) a microwave, you can definitely melt the chocolate and peanut butter over a double boiler. When microwaving, be careful to use a microwave safe dish (I used my Pyrex measuring cup.) Microwave for 30 seconds at a time, stirring in between, to ensure that you do not burn it.
When you mix the chocolate mixture into the corn flakes it will seem initially like it is not nearly enough. As you stir it, it will create a thin, even coat on the corn flakes.
This is a really fun recipe to involve your children with. They can help scooping out lumps onto your baking sheet. Don’t try for perfect circles – this one is meant to be lumpy. That makes it perfect for the kids to help with! They will also have lots of fun with measuring the corn flakes, especially if you are making a larger batch.

- 4 cups Corn Flakes
- 1 cup chocolate chips
- 1/4 cup natural peanut butter
How to make peanut butter corn flake clusters:
- Measure your corn flakes into a mixing bowl
- Prepare peanut butter and chocolate in a microwave safe dish.
- Microwave on high for 30 seconds at a time, stirring in between, until melted.
- Pour the peanut butter-chocolate mixture over the corn flakes.
- Mix until the corn flakes are well-coated.
- Spoon onto a baking sheet and freeze.
- Once it’s frozen, you can gather it into a storage container.
